To our Troops Thanks, We Love You!

3 cups chopped, seeded plum tomatoes or 3 cups drained, canned stewed tomatoes
1/3 cup Calamata Olives, pitted, chopped
1 large clove garlic
1 tsp. Crushed red pepper flakes
2 tablespoons extra virgin olive oil
1 teaspoon anchovy paste
3/4 lb. Penne pasta, cooked and drained
1/2 cup freshly grated Parmesan Cheese
1 Tablespoon chopped fresh Italian parsley

Cook pasta in salted boiling water according to box directions to al dente.  Drain. In a blender or food processor, puree 2 cups tomatoes;  pour into serving bowl.  Add remaining tomatoes, the olives, garlic, pepper flakes, oil, anchovy paste and pasta;  toss until coated and mixed. Add cheese; toss. Sprinkle with parsley.  Makes 4 servings.
