3 pounds of mixed fish (mullet, octopus, squid, mussels, eel)
8 cups water
2 carrots
2 stalks celery
1 bay leaf
Salt and pepper
1 onion, finely chopped
3 cloves garlic
4 anchovy fillets, finely chopped
3/4 pound tomatoes, peeled
6 tablespoons olive oil
6 slices stale bread
Chopped parsley

Clean and wash the fish, then cut them into pieces.  Remove the heads, tails, bones and shells and use them to make the fish stock with the water, carrots, celery, bay leaf, salt and pepper.  Put the onion, 2 cloves of the garlic and the anchovies into a deep pan with the oil to brown.  Then add all the fish, (except the octopus and squid, if using them, they should be added to the pan 5 minutes before adding the other fish).  Stir in the tomatoes and stock. Boil the soup gently for 15 minutes. Taste for seasoning.  Rub the slices of bread with the remaining garlic, sprinkle with a few drops of olive oil and toast lightly in the oven.  Put a slice of bread in each plate and pour the hot soup over it. Sprinkle with chopped parsley. Serve hot. Serves 6.
