"Round Steak with Tomatoes"

1 pound onions, finely sliced
1/4 cup olive oil
1/2 pound bacon, minced
1 rump steak (about 2 3/4 pounds)
1/4 cup flour
Salt and pepper
1 clove garlic
2 cups red wine
2 1/4 pounds tomatoes, peeled, seeded and drained
Polenta to accompany
Sauté the sliced onions in a large skillet with the oil and minced bacon. Before the onions change color, add the steak and brown on both sides. Turn it, flour it, and season it with salt, pepper and two drops of crushed garlic from a garlic press. Pour the wine over the meat and let it evaporate slightly. Add the tomatoes mixed with the basil and reduce the heat. Simmer slowly for 1 1/2 to 2 hours. If the sauce becomes too thick, dilute it with a little clear stock. Test the meat with a fork to test for doneness. When tender, slice and serve on a warmed serving dish. Cover with the sauce. Garnish the edges of the dish with slices of hot polenta. Steak serves 6.
