3/4 pound beef or veal, ground twice 1/4 pound pork, ground twice 1/4 cup finely chopped onion 6 tablespoons butter 1/2 cup heavy cream 1/3 cup bread crumbs (soft) 1/2 cup water Salt and ground fresh black pepper 1/4 teaspoon nutmeg 2 tablespoons oil
Place the ground meats in a mixing bowl. Cook the onion in two tablespoons of the butter until wilted. Cool slightly and add to the meats. Soak the bread crumbs in the water and cream; then squeeze to remove most of the liquid. Add the crumbs to the meats. Season with salt, pepper and nutmeg and shape mixture into small balls. Melt the remaining butter in a skillet and add the oil. Cook the meat balls in the skillet until golden brown on all sides and thoroughly cooked. Serve hot or cold.
