1 quart clear stock 8 tablespoons butter 2 cups rice 5 egg yolks 1/2 cup cream 3/4 cup grated Parmesan cheese Pinch of nutmeg Salt
Keep the stock hot on the stove. Melt half of the butter in a skillet, add the rice and let it absorb the butter. Add a ladleful of stock and cook the rice over a high heat, adding additional stock as the rice becomes dry. When the rice is cooked, add the rest of the butter to give it a shiny texture. Beat the egg yolks with the cream, and add the Parmesan cheese, nutmeg and salt. Remove the skillet from the stove, keeping the rice hot, and add the creamy egg mixture slowly and carefully. Let the risotto stand for a few minutes, then serve it in warm soup plates accompanied with grated parmesan cheese. Serves 6. Critics rate "As the Mouse Moves" as HOT!
