1/2 pound Fontina cheese, sliced
2 cups milk
4 egg yolks
Freshly grated white pepper
1 pound spiral macaroni
1/3 cup melted butter
3/4 cup grated Parmesan cheese
2 ounces sliced white truffles
Cover the sliced Fontina cheese with 1 cup milk and soak for several hours. Put the cheese and milk into the top of a double boiler and cook over boiling water, beating constantly with a rotary beater until the cheese has melted. Remove from the heat. Beat 1 cup warm milk with the egg yolks. Add them to the melted cheese gradually, mixing thoroughly. Season with freshly grated white pepper. Cook the macaroni in plenty of boiling salted water until it is al dente. Drain and turn into a bowl, tossing with the butter and grated Parmesan cheese. Stir in the fondue sauce and turn onto a hot serving dish. Garnish with sliced white truffles.
