1/2 onion, chopped
1 carrot, finely sliced
6 tablespoons butter
1/4 pound beef suet, chopped
1 sirloin roast (3 1/2 pounds)
1/2 pound sliced bacon, parboiled 10 minutes
1/4 cup flour
Salt and pepper

Sauté the onion and carrot in an ovenproof dish with 2 tablespoons of the butter and the suet.  Smear the roast with the remaining butter.  Lay the bacon slices lengthwise along the roast and tie in position with string. Dredge the roast in flour and brown in the oven proof dish with the onion and carrot. Season with salt and pepper and transfer the dish to a preheated 325 degree oven.  Baste frequently with the pan juices and roast 1 3/4 hours. To be properly cooked, the beef should be golden on the outside and pinkish inside. Slice the cooked roast and serve on a hot platter.  Braised spinach and boiled potatoes are great with the Roast Beef.
