1 oz. Butter
1 lb. Gruyere cheese or half Gruyere and half Emmenthal Cheese or use Cheddar Cheese
Seasoning
1/2 pint dry white wine
A little Brandy or Cider 

Butter the bottom and sides of an earthenware casserole, copper or fireproof dish with unsalted butter. Add the grated cheese, seasoning and wine. Keep warm over a gentle heat and stir from time to time.  If desired, add a little brandy.  Corn flour can be used to prevent the mixture from curdling;  blend 2 teaspoons corn flour with a little wine, add to the cheeses, etc. This old favorite has made a big comeback served with toast or fresh bread.  Serves 4.
