1 to 1 1/2 pounds crabmeat 1/2 cup olive oil 1 clove garlic 1 medium tomato, peeled and seeded 1 quart fish stock or bottled clam juice 4 tablespoons butter 2 cups rice Salt and pepper Chopped parsley
Pick over the crabmeat and remove any cartilage. Heat the oil in a saucepan and sauté the garlic. Add the tomatoes and cook over high heat, stirring, until the sauce has thickened. Reduce the heat and add the crabmeat, reserving a few pieces for garnish. Heat the fish stock. Melt the butter in a saucepan and sauté the rice until it has absorbed all the butter. Add the hot fish stock. Cook over high heat without stirring. After about 10 minutes stir the crabmeat and the sauce into the rice, adding more stock if necessary. Season with salt and pepper to taste. When the rice is still firm but cooked, turn it out on a serving dish. Garnish with the reserved crabmeat and sprinkle with a dash of olive oil and some chopped parsley. Serves 6. Critics rate "As the Mouse Moves" as HOT!
