1/4 cup butter
1 cup chopped onions
1 cup chopped mushrooms
1 clove garlic, finely minced
1 cup finely grated carrots
2 cups dry bread crumbs
1/4 cup chopped parsley
1/4 teaspoon marjoram
1/4 teaspoon thyme
1 1/2 tablespoons lemon juice
Salt and freshly ground black pepper
1 - 6 pound to 8 pound Whole Salmon, cleaned

Preheat the oven to 350 degrees. Melt the butter in a skillet and sauté the onions until tender.  Add the mushrooms and garlic and cook two minutes longer. Add the carrots, bread crumbs, parsley, marjoram, thyme, lemon juice, two teaspoons salt and one quarter teaspoon pepper.  Mix well. Season the salmon inside and outside with the salt and pepper.  Stuff the salmon cavity with the bread crumb mixture.  Sew to close. Wrap fish in oiled or buttered aluminum foil, set in a shallow pan and bake about 15 minutes a pound, or until fish flakes easily with a fork.  Serves 6 to 8.
