"As we graze it grows"

2 racks of spareribs
1/2 cup soy sauce
1 teaspoon freshly ground black pepper
1/4 cup dark honey
1/2 cup dry sherry

Marinate the spareribs in the mixture of ingredients.  Rub the meat with the mixture so that all parts are coated. Refrigerate one hour.  Remove the meat and let it dry one hour.  If a home oven is used preheat to 350 degrees.  If a smoke oven is used, prepare for smoking.  Place spareribs on a rack in a roasting pan and bake one and one half to two hours. Or, place in a smoke oven and let stand one and one quarter to one and one half hours.  Serves approximately 6.
