2 cups of raspberries
2 passion fruits
1 2/3 cups low fat cream cheese
2 tablespoons granulated sugar
Raspberries and fresh mint sprigs, for decoration
Mash the raspberries in a small bowl with a fork until the juice runs. Scoop out the passion fruit pulp into a separate bowl with the cream cheese and sugar and combine thoroughly. Spoon alternating spoonfuls of the raspberry pulp and the cream cheese mixture into stemmed glasses or one large serving dish, stirring lightly to create a swirled effect. Decorate each dessert with a whole raspberry and a sprig of fresh mint. Serve chilled. You can also use a mix of strawberries, red currants, mangoes, peaches or apricots and puree in a food processor or blender before mixing with the cream cheese. Serves 4.
