1 pound red or black cherries Generous 1/2 cup granulated sugar Pared rind of 1 lemon 1 tablespoon arrowroot 1/4 cup Kirsch Vanilla ice cream, to serve
Pit the cherries over a pan to catch the juice. Drop the pits into the pan as you work. Add the sugar, lemon rind and 1 1/4 cups water to the pan. Stir over low heat until the sugar dissolves, then bring to a boil and simmer for 10 minutes. Strain the syrup, then return to the pan. Add the cherries and cook for 3 - 4 minutes. Blend the arrowroot to a paste with 1 tablespoon cold water and stir into the cherries, after removing them from the heat. Return the pan to the heat and bring to a boil, stirring constantly. Cook the sauce for a minute or two, until it is thick and smooth. Very carefully heat the Kirsch in a ladle over a flame, ignite it and pour it over the cherries. Spoon the cherries and sauce over ice cream and serve immediately. Cherries Jubilee serves 4. Critics rate "As the Mouse Moves" as HOT!
