2 medium size onions, finely chopped
2 tablespoons butter
2 tablespoons vinegar
2 tablespoons dark brown sugar
1/4 cup lemon juice
1 cup Ketchup
3 tablespoons Worcestershire sauce
1/2 tablespoon prepared mustard
1/2 cup water
1/2 cup chopped parsley
2 racks of spareribs, the smaller the better
Salt and freshly ground pepper
Cook the onion in the butter until wilted. Add the vinegar, brown sugar, lemon juice, Ketchup, Worcestershire, mustard, water and parsley. Simmer one half hour. Preheat the oven to 450 degrees. Sprinkle the spareribs with salt and pepper. Place on a rack in a roasting pan and bake 30 minutes. Remove spareribs. Pour off fat from pan. Return spareribs without rack to pan and brush with sauce. Reduce oven heat to 300 degrees and continue baking 45 minutes. Turn spareribs as they cook and brush frequently with sauce. Serves 8-12.
