4 one pound trout
Salt and freshly ground black pepper
1 clove garlic, very finely chopped
8 thin slices of lemon
4 tablespoons dry white wine
4 tablespoons orange juice
1/4 cup butter
Preheat the oven to 350 degrees. Leave fish whole; clean, wash and pat dry. Place each fish on a piece of aluminum foil big enough to enclose it in a package for baking. Sprinkle each fish in the inside cavity with salt, pepper and garlic. Season the fish outside with two lemon slices. Sprinkle each with one tablespoon wine and one tablespoon orange juice. Dot each fish with one tablespoon of butter. Fold up foil and seal leaving a small space on top. Bake about 25 minutes, or until fish flakes easily.
