"As we graze it grows"

4 eggs
1 1/2 cups vegetable oil
1 - 8 ounce package cream cheese softened
3 cups grated carrots
1 cup chopped nuts
2 cups sugar
2 cups flour
2 teaspoons soda
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon vanilla

Beat cheese and sugar together at medium speed of mixer until smooth and creamy.  Add eggs and oil;  blend well. Gradually add remaining ingredients and blend well. Pour batter into a greased floured 13 x 9 x 2 inch pan and bake at 350 degrees for 45 to 55 minutes.  Cool.  Dust with powdered sugar. Cut into squares and serve with whipped cream. 
Serves 12 - 16.
