2 3/4 cups whole wheat self rising flour
1 cup chopped dates
2 teaspoons pumpkin pie spice
1/2 cup chopped walnuts
1/4 cup sunflower oil
1/2 cup dark brown sugar
1 1/4 cups skim milk
Walnut halves, for decoration
Preheat the oven to 350 degrees. Grease and line a 2 pound loaf pan with waxed paper. Sift together the flour and spice, then add any bran left in the sieve. Stir in the dates and walnuts. Mix the oil, sugar and milk, then stir evenly into the dry ingredients. Spoon into the prepared pan and arrange the walnut halves on top. Bake the cake for about 45-50 minutes or until golden brown and firm. Turn out the cake, remove the lining paper and let cool on a wire rack. Makes 1 cake.
