"As we graze it grows"

2 pounds of potatoes, scrubbed
1/2 cup extra virgin olive oil
Salt and freshly ground black pepper
2 cloves garlic, finely chopped
12 ounce tomatoes, diced
3 anchovy fillets, chopped
2 tablespoons capers, rinsed

Boil the potatoes in their skins until tender.  Peel and mash or pass through a food mill. Beat in 3 tablespoons of the oil, and season. Heat another 3 tablespoons of the oil in a medium saucepan. Add the garlic and the chopped tomatoes, and cook over moderate heat until the tomatoes soften and begin to dry out, 12 - 15 minutes. Meanwhile, preheat the oven to 400 degrees.  Oil a shallow baking dish. Spread half the mashed potatoes into the dish in an even layer. Cover with the tomatoes, and dot with the chopped capers and the anchovies.  Spread the rest of the potatoes on top of the filling.  Brush the top with the remaining oil. Bake in a preheated oven for 20 to 25 minutes, or until the top is golden brown.  This pizza is served directly from the baking dish.  Serves 4.
