"As we graze it grows"

1 cup fresh bread crumbs
3/4 cup light brown sugar, firmly packed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon grated nutmeg
1/4 cup butter
2 pounds tart sweet apples
Juice of 1 lemon
1/3 cup finely chopped walnuts

Preheat the broiler.  Spread the bread crumbs on a baking sheet and toast under the broiler until golden, stirring so they are evenly colored.  Set aside.  Preheat the oven to 375 degrees.  Butter a 2 quart baking dish. Set aside.  Mix sugar with the pieces.  Cut in the butter in very small pieces. Set aside.  Peel, core and slice the apples.  Toss immediately with lemon juice to prevent them from turning brown.  Sprinkle about 2 1/2 tablespoons of the bread crumbs over the bottom of the dish. Cover with a third of the apple slices and sprinkle with a third of the sugar spice mixture.  Add another layer of bread crumbs and dot with a third of the butter.  Repeat the layers two more times, ending with a layer of bread crumbs.  Sprinkle with the nuts, and dot with the remaining butter. Bake until the apples are tender and the top is golden brown about 35 to 40 minutes. Serve warm with ice cream or serve cold. Serves 6.
