"As we graze it grows"

1 large red  pepper, chopped
1 large green pepper, chopped
1 large onion, chopped
2 large potatoes, peeled and diced
2 tablespoons olive oil
2 medium size zucchini, chopped
1 pound of fresh mushrooms, chopped
1/4 teaspoon crushed red pepper
1/2 teaspoon Italian herb seasoning
1/2 cup fresh Italian parsley, chopped
3 cloves of garlic, crushed
1/4 cup Parmesan cheese, freshly grated

In a large sauté pan, sauté the red and green peppers, onion, and potato in the oil for about 5 minutes;  stir often.  Add the zucchini, mushrooms, hot pepper, Italian herb seasoning, parsley, and garlic.  Stir thoroughly and cook for 10 minutes.  Toss with Parmesan cheese and serve hot.
