"As we graze it grows"


4 squares of unsweetened chocolate
2 tablespoons confectioner's sugar
2 tablespoons sifted arrowroot
2 tablespoons Framboise liqueur (or cognac)
1 cup skim milk ricotta cheese
1 cup fresh raspberries, halved (frozen can be used)

Melt the chocolate in a small bowl over warm water and combine it with the sugar, arrowroot, and liqueur.  Cook over low heat and stir constantly until the mixture is smooth.  Add the ricotta cheese and continue to stir, keeping the mixture smooth and creamy.  (do not boil.)  Let the mixture cool slightly, stir in the raspberries, and spoon into 6 small dessert bowls.  Cover each bowl with plastic wrap and refrigerate for a few hours or overnight.  Top each dish with a raspberry before serving.
