"As we graze it grows"

6 1/2 pound pork chops
2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup olive oil
1 1/2 teaspoons finely minced garlic
3 tablespoons chopped fresh parsley
1 cup dry Chianti or other dry red wine

Trim the fat off the pork chops, and season with salt and black pepper.  Heat the olive oil in a skillet until almost smoking, and add the pork chops and cook, over high heat, until brown on both sides.  Cover and cook;  over low heat, for about 30 minutes, turning occasionally.  Remove chops from skillet and keep hot.  Pour off all but 2 tablespoons oil.  Add the garlic and parsley, and sauté, over very low heat, until garlic is lightly browned.  Add the red wine and, over high heat, reduce liquid to about 1/2 cup.  Pour wine sauce over chops and serve.  Serves 6.
