NYC Restaurant Reviews - "As we graze it grows"


1/2 cup brown sugar
1 tablespoon honey
1/3 cup margarine, melted
1 egg
1 1/2 teaspoon vanilla
3/4 cup shredded carrots
1 teaspoon baking powder
1 cup whole wheat flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves (optional)
1/2 cup oatmeal
1/4 cup wheat germ
1/2 cup raisins

In a small bowl, cream together sugar, honey, margarine, egg and vanilla until light and fluffy.  Add carrots and mix well.  In another bowl, thoroughly stir together flour, baking powder, cinnamon, cloves (if used), oatmeal and wheat germ.  Stir in dry ingredients into the creamed mixture;  fold in the raisins.  Pour mixture into a 9 x 2 x 2 inch pan sprayed with vegetable oil.  Bake at 350 degrees for 30 minutes.  Let cool in pan on wire rack.  Cut into bars or squares.  Let cookies set overnight so flavors can blend.
