1/4 lb. Bacon
2 onions
1 carrot
3 sticks celery
1 bunch parsley
3 tbs. Olive oil
10 oz. Ground beef
4 oz. Ground pork
2 tbs. Tomato paste
1 1/4 cups hot beef broth
2 cups dry white wine
1 bay leaf
1/2 tsp. Salt
1 pinch black pepper
1 pinch sugar
4 quarts water
2 tsp. Salt
1 3/4 cups spaghetti
4 oz. Chicken livers
2 tsp. Butter

Cut the bacon into narrow strips, peel and finely chop the onions, scrape, wash and dice the carrots.  Wash the celery and finely slice. Wash, pat dry and chop the parsley.  Heat 2 tbs. Oil in a large saucepan.  Brown the ground meat, stirring add the bacon and onions and brown for 3 more minutes.  Add the carrot, celery, parsley, tomato paste, stock, wine, bay leaf, salt, pepper and sugar.  Cook the sauce gently for 30 minutes over a low heat.  Bring the water to a boil, and add the salt, the remaining oil, and the spaghetti, cook until al dente about 8 minutes.  Fry the chicken livers in 1 tsp. Butter, finely chop and add to the sauce.  Drain the spaghetti in a colander, add the rest of the butter and serve with sauce on top.
