3 ounces sun dried tomatoes
2 large garlic cloves
1 teaspoon dried basil
1/2 teaspoon salt
1/2 cup oil
2 parsley sprigs
1/4 teaspoon red pepper
1 green onion, chopped
6 ounces cream cheese
2 ounces butter, softened
Cover the dried tomatoes with boiling water and let stand for 20 minutes to re-hydrate. Drain. Combine all but cream cheese and butter in processor, then let marinate for 2 hours. Combine cream cheese and butter. Whip until smooth. In a small bowl lined with plastic wrap, layer cheese, tomato, cheese, tomato, and cheese. This will keep for several days in the refrigerator. Serve with toast.
