2 cups all purpose flour
1 1/2 teaspoons ground ginger
1 teaspoon cinnamon
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground allspice
1 1/2 sticks unsalted butter softened (6 ounces)
1/2 cup light brown sugar (packed)
1 egg
3/4 cup molasses
3/4 cup milk
Unsweetened light whipped cream

Preheat the oven to 350 degrees. Butter a 9 inch round cake pan.  In a bowl, sift the flour with the ginger, cinnamon, baking soda, salt and allspice. In a large bowl, cream the butter and brown sugar.  Beat in the egg and then the molasses.  Add the dry ingredients and the milk in 5 parts, beginning and ending with the dry ingredients and beating after each addition just to mix.  Using a spatula, scrape the batter into the prepared pan and smooth the top. Bake for about 50 minutes, until a toothpick inserted in the center comes out clean.  Transfer to a rack to cool for about 15 minutes before serving with whipped cream.  Makes 6 servings.
