2 1/2 lb. Boned leg of lamb 1/3 cup olive oil 2 garlic cloves, crushed 1 onion, sliced 1 small red chili, cored, de-seeded, and chopped finely 3/4 cup dry white wine 1 cup pitted black olives Salt Chopped fresh parsley, to garnish
Cut the lamb into 1 inch cubes. Heat the oil in a skillet and fry the garlic, onion, and chili for 5 minutes. Add the wine and meat and cook for a further 5 minutes. Stir in the olives, then transfer the mixture to a casserole. Place in a preheated oven, 350 degrees and cook for about 1 hour 20 minutes until the meat is tender. Season to taste with salt, and serve garnished with chopped parsley. Serves 4. Critics rate "As the Mouse Moves" as HOT!
