1 stick (4 ounces) cold unsalted butter, cut into pieces 1/2 cup (packed) light brown sugar 1 egg 1/2 teaspoon vanilla extract 1/2 cup unbleached flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1 1/4 cups old fashioned rolled oats 1 package (6 ounces) chocolate chips
Preheat the oven to 375 degrees. Butter an 8 inch square baking pan and set aside. In a food processor, process the butter and brown sugar until light and fluffy, scraping down the sides of the bowl occasionally. Add the egg and vanilla and process until just combined. In a medium bowl, toss together the flour, baking soda and salt. Add the dry mixture to the processor and process, scraping the sides of the bowl once, until blended. Using a rubber spatula, scrape the batter into the medium bowl. Stir in the oats and chocolate chips. Scrape the batter into the prepared pan and spread evenly. Bake until golden brown, 20 to 25 minutes. Cut into 12 bars while slightly warm. Remove from the pan and serve at once or set on a rack to cool. Makes 12 bars.
