"Pumpkin Pie with Vanilla Ice Cream"

2 cups heavy cream
2 tablespoons confectioners' sugar
1 1/2 cups canned pumpkin
1 1/4 cups light brown sugar
1/4 teaspoon ginger
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1 pint vanilla ice cream, softened
Chill a nine inch pie plate in the freezer. Whip one and one half cups of the heavy cream with the confectioners sugar. Using a spoon or spatula, make a crust on the bottom and up the sides of the pie plate with the whipped cream. Freeze until firm. Mix the pumpkin with the brown sugar, ginger, cinnamon, nutmeg and salt. Stir in the ice cream and either mix thoroughly to incorporate or mix slightly to give a marbleized effect. Whip the remaining heavy cream for garnish. Spoon pumpkin mixture into the cream crust, garnish with whipped cream and freeze until firm. Remove from the freezer 15 minutes before serving. Makes 6 servings.
