1/4 cup pine nuts 8 medium Golden Delicious apples (about 1/2 pound each) 2/3 cup raisins 1/3 cup sugar 1 1/2 cups dry white wine 4 whole cloves 1 cinnamon stick Finely grated zest of 1/2 a lemon 2 tablespoons unsalted butter, melted
Preheat the oven to 375 degrees. In a small skillet, toast the pine nuts over moderately low heat, shaking the pan often, until the nuts are fragrant and golden brown, about 6 minutes. Set aside to cool. Butter a 9 by 13 inch glass or ceramic baking dish. Core the apples and peel them 2/3 of the way down. Arrange the apples in the prepared baking dish. In a small bowl, combine the raisins and pine nuts and stuff into the apple cavities. Sprinkle the sugar over the apples. Pour the wine into the pan and scatter with cloves, cinnamon and lemon zest around the apples. Drizzle the melted butter over the apples. Bake for 45 to 55 minutes, basting occasionally, until the apples are tender when pierced with a knife. Let cool in the syrup to lukewarm before serving. Serves 8.
