2 tablespoons vegetable oil 4 garlic cloves, minced 1/4 teaspoon freshly ground white pepper 1 teaspoon sugar 2 tablespoons soy sauce 1/2 pound asparagus, trimmed 5 inches long 1/2 pound broccoli, cut into florets Two 8 ounce salmon fillets, skinned
In a small skillet, heat 1 1/2 teaspoons of the oil over moderate heat until hot. Add the garlic and cook, stirring, until light brown, about 2 minutes. Reduce the heat to low and add the white pepper, sugar and soy sauce; cook the mixture, stirring, for about 30 seconds. Remove from the heat and set aside. In a steamer over boiling water, steam the asparagus and broccoli until tender and bright green about 2 minutes. Drain and cover to keep warm. Preheat the broiler. Place the salmon on a broiler pan and brush with the remaining 1 1/2 tablespoons oil. Broil the salmon fillets on one side only until brown and crusty on the outside and slightly translucent in the center, 4 to 5 minutes. Serve on warm dinner plates and top with garlic sauce.
