2 cups dry small pasta shells 1 tablespoon Canola oil 2 tablespoons flour 1 cup skim milk 1 teaspoon black pepper 2 teaspoons grated onion 1/2 cup grated low fat Cheddar cheese 1/2 cup non-fat sour cream 1 cup hot smoked salmon (not lox strips) broken into small bite size pieces 1 teaspoon lemon juice
Boil pasta until tender. Prepare sauce while pasta is cooking. In a small saucepan, heat oil, then blend in flour. Slowly whisk in milk, then pepper and onion. Stirring constantly, allow sauce to thicken. Turn off the heat, and while stirring, gradually add grated Cheddar until it is melted. Remove from heat and fold in sour cream and smoked salmon. Mix in lemon juice. When pasta is cooked, drain and toss with sauce. Serve at once. Makes 4 servings. Critics rate "As the Mouse Moves" as HOT!
