4 baking potatoes, peeled 1 garlic clove, minced 1 teaspoon salt 1/2 teaspoon freshly ground pepper 1 1/2 cups water 1/2 cup heavy cream 1 tablespoon unsalted butter, softened
Preheat the oven to 375 degrees. Grease a non-reactive 9 x 13 x 2 inch baking dish. In a food processor or using a large knife, slice the potatoes crosswise about 1/8 inch thick. Arrange half of the potato slices, overlapping, in the bottom of the prepared dish. Sprinkle the garlic, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper on top. Cover with the remaining potatoes, salt and pepper. Pour in the water and cream and dot with the butter. Bake the gratin for 45 to 50 minutes, until the potatoes are tender and the top is browned.
