1 sheet frozen puff pastry, thawed
3 Rome Beauty apples, peeled, corned and thinly sliced
2 tablespoons (1/4 stick) butter, melted
2 tablespoons sugar
1/4 cup apricot preserves
1 teaspoon honey
Preheat the oven to 400 degrees. Place pastry in 9 1/2 inch tart pan. Trim edges. Pierce pastry with fork. Arrange apples slices on pastry in overlapping concentric circles. Brush butter evenly over apples. Sprinkle with sugar. Bake until pastry is golden and apples are soft, about 35 minutes. Stir preserves and honey in small saucepan over medium low heat until warmed through, 1 to 2 minutes. Strain. Brush over hot tart. Serve immediately. Serves 6 to 8.
