"Homestyle Potatoes with Sage"

2 tablespoons (1/4 stick) butter
1 small onion, thinly sliced
1 garlic clove, minced
2 small un-peeled potatoes, sliced in half lengthwise, then paper thin crosswise, to form half circles
1 tablespoon coarsely chopped fresh sage or
1 teaspoon dried crumbled sage
Melt the butter in a large nonstick skillet over medium low heat. Add onion and garlic and stir until translucent, 2 to 3 minutes. Add potatoes and sage. Cover and cook 10 minutes, stirring occasionally. Turn potatoes over using spatula. Continue cooking until bottom is golden brown, 5 minutes.
Serves 3 to 4.
