4 small boneless chicken breast halves, skinned
All purpose flour
3 tablespoons butter
3/4 cup chopped onions
1 garlic clove, minced
1 teaspoon dried rosemary, crumbled
1 tablespoon all purpose flour
1/2 cup chicken stock or canned low salt broth
1/2 cup milk
Preheat oven to 325 degrees. Pat chicken dry. Dredge in flour. Melt butter in heavy medium skillet over medium heat. Add chicken and cook until light brown, about 3 minutes per side. Transfer chicken to small glass baking dish. Add onions, garlic and rosemary to same skillet and cook until onions soften, stirring frequently, about 5 minutes. Add 1 tablespoon flour and stir 2 minutes. Combine broth and milk and mix into onion mixture. Cook until sauce thickens, stirring frequently, about 8 minutes. Pour over chicken. Cover and bake until chicken is done, about 20 minutes. Serve hot. Serves 2.
