5 boneless chicken breast halves, skinned and cut into 1 inch pieces Salt and pepper 3 tablespoons butter 1 medium onion, sliced 1/2 pound mushrooms, sliced 1 tablespoon all purpose flour 1 cup chicken stock or canned broth, heated 1/2 cup sour cream 1 tablespoon Dijon mustard Chopped fresh parsley Freshly cooked rice
Season chicken with salt and pepper. Melt 2 tablespoons butter in a heavy large skillet over medium high heat. Add chicken and cook until opaque, stirring occasionally, about 5 minutes. Transfer to serving dish. Cover and keep warm. Add onion and mushrooms to the skillet and cook until brown, stirring frequently for 6 to 8 minutes. Add to chicken dish and keep warm. Melt remaining butter in a small saucepan over medium low heat. Add flour and stir 3 minutes. Whisk in broth and stir vigorously until sauce is thickened and smooth, about 5 minutes. Stir in sour cream and mustard. Heat sauce until warmed through, about 3 minutes; do not boil. Pour over chicken. Top with parsley. Serve with rice. Makes 4 to 6 servings.
