3 eggs, beaten to blend
5 to 6 large garlic cloves, minced
2 tablespoons finely chopped fresh parsley
Salt and pepper
1- 3 1/2 pound chicken, cut into 8 pieces, patted dry
2 cups seasoned dry breadcrumbs
1 cup freshly grated Parmesan cheese
1/2 cup (1 stick) butter
Combine first 3 ingredients in a medium bowl. Season with salt and pepper. Add chicken, turning to coat. Cover and chill 3 hours, turning occasionally. Preheat oven to 350 degrees. Combine breadcrumbs and cheese in medium bowl. Melt butter in 10 x 15 inch jelly roll pan in oven. Drain chicken. Pat dry. Dredge in breadcrumb mixture. Add chicken skin side down to pan with butter. Bake until chicken is golden brown, turning occasionally, about 45 minutes. Serve hot or cold. Makes 4 servings.
