2 ounces unsalted butter 1 small white onion, finely chopped 1 pound Arborio or short grain rice 1/2 cup dry white wine 1 quart vegetable broth 1 pound apples (or pears) peeled, cored, and diced Salt and pepper 7 ounces Gorgonzola 2 tablespoons fresh chopped parsley Grated Parmesan cheese
Melt the butter in a casserole with the chopped onion and let cook gently over low heat until the onion is soft and transparent. Add the rice, and let it brown, stirring well, for 3 minutes. Add the white wine and continue to stir the rice until the wine has evaporated. Add a cup of hot broth and the apples (or pears). Stir and continue adding the broth, 1/2 cup at a time, until the liquid has been absorbed and the risotto is done (about 15 minutes). Season with salt and pepper. A few minutes before the end of cooking, add the Gorgonzola cheese in small pieces, and the parsley, and stir well. Serve hot and sprinkle with grated Parmesan cheese. Serves 6.
