1/4 cup butter 1/2 cup light brown sugar 1/4 teaspoon nutmeg 2 large apples, peeled, cored and thinly sliced 1 teaspoon lemon juice 1 1/3 cups cake flour 3/4 cup sugar 1 3/4 teaspoon baking powder 1/4 teaspoon salt 3 tablespoons shortening, at room temperature 1/2 cup milk 1 teaspoon vanilla 1 egg
Preheat the oven to 375 degrees. Melt butter in an 8 inch square pan. Add brown sugar and nutmeg and blend well. Remove from the heat. Arrange apples slices, slightly overlapping them on the brown sugar mixture. Sprinkle apples with the lemon juice and set aside. Sift the flour with the sugar, baking powder and salt. Stir the shortening just to soften and stir in the flour mixture, milk and vanilla. Mix until the flour is dampened. Beat two minutes with electric mixer at medium speed or by hand beat 300 strokes. Add the egg and beat one minute longer with the mixer or 150 strokes. Pour the batter over the apples. Bake 35 minutes, or until done. Cool cake in the pan 5 minutes then invert onto a serving plate. Let stand a minute then remove pan. Serve warm. Makes 6 to 8 servings. Critics rate "As the Mouse Moves" as HOT! CLICK FOR THE DAILY SOAP OPERA UPDATE ! http://www.readio.com/mouse/mouse1.html
