4 chicken livers 4 chicken legs, boned Salt and freshly ground black pepper 3 tablespoons freshly chopped rosemary 3/4 pint rich chicken stock 2 oz. Butter
Cut any veins from the chicken livers and rinse them in plenty of cold water. Spread the chicken meat out on a work surface, skin side down. Sprinkle the inside of the meat with salt, pepper and 2 tablespoons of the rosemary. Place a chicken liver over the seasoning on each piece of chicken, roll the meat tightly around the liver and secure well with kitchen string. Do this for all four pieces of meat. Heat the chicken stock with the remaining rosemary and add the chicken rolls. Cover and simmer gently for 20 minutes. Remove the chicken and keep warm. Place pan back on a high heat and allow the sauce to reduce and thicken. Reduce the heat to very low and whisk in the butter, piece by piece. Season the sauce to taste. Cut the rolls into slices and serve on a bed of spaghetti with the sauce poured over. Serves 4. Critics rate "As the Mouse Moves" as HOT!
