3/4 cup very warm water 1 teaspoon sugar 2 packages active dry yeast 1 1/2 cup mashed potatoes 1 1/2 cups low fat buttermilk 4 tablespoons melted butter 1/2 cup honey 2 teaspoons salt 2 cups oat, rice or whole wheat flour 1/2 cup wheat germ 4 1/2 cups all purpose flour
Dissolve the yeast and sugar in water. In a large bowl, mix mashed potatoes, buttermilk, butter, honey and salt. Beat for 2 minutes, then add yeast mixture. Stir in oat, rice or wheat flour, wheat germ and 2 cups all purpose flour. Turn onto floured board and work in remaining flour. Knead 8 minutes, adding flour as needed to keep dough from sticking. Place in a bowl, spray with nonstick oil, turn dough to coat all sides. Cover, and let rise until double in bulk. Punch down, then shape into 3 loaves. Place each loaf in a 9" x 5" bread pan sprayed with nonstick oil. Let rise until double in bulk. Bake in a 375 degree oven for 30 to 35 minutes. Makes 3 loaves of bread.
