3 tablespoons olive oil 1 onion, finely sliced 1 1/2 lbs. shoulder of veal 7 fl. ounces chicken stock 1/2 tsp. Dried marjoram 1 egg yolk 1/4 pint single cream 1 teaspoon lemon juice Salt and freshly ground black pepper
Heat the oil in a frying pan and gently fry the onion for 1 minute. Add the meat to the frying pan and sauté until lightly browned. Tip out any excess fat and pour the contents of the pan into a flameproof casserole. Add the stock to the casserole and add sufficient water to cover the meat. Add the marjoram and stir. Cover and simmer slowly for approximately 1 hour and 15 minutes, checking the meat for tenderness and adding water should the level of liquid drop too low. Beat the egg yolk into the cream. Remove the meat from the casserole and keep it warm. Whisk the cream mixture into the sauce, and continue whisking over a gentle heat until the sauce thickens. Remove immediately from the heat, stir in the lemon juice, season with salt and pepper, pour over the meat and serve. Serves 4. Critics rate "As the Mouse Moves" as HOT!
