12 small slices white bread
4 small goat cheese
4 small servings of mixed green salad
1 tablespoon freshly chopped tarragon
1 tablespoon tarragon vinegar
2 tablespoons olive oil
Salt and freshly ground black pepper
Preheat the oven to 400 degrees. Using a pastry cutter, cut the sliced bread into 12 rounds. Cut each cheese horizontally into 3 rounds and place on the prepared bread, then sprinkle with the chopped tarragon. To prepare the dressing, mix together the tarragon vinegar, olive oil, salt and pepper. Stir or shake well and pour over the prepared mixed green salad. Place the cheese and bread rounds on a baking sheet in the preheated oven and cook until the cheese melts slightly and top is golden. The cheese may be grilled. Remove from the oven and set the cheese and toast rounds on the tossed salad. Serve immediately. Serves 4.
