Chef's Daily Recipe for 09/05/03 : Macaroni with Basil and Walnut Sauce
"Macaroni with Basil & Walnut Sauce"

4 oz. Shelled walnuts
15 basil leaves
1/4 clove garlic
1 lb. Macaroni
Salt and freshly ground black pepper
1 drop of olive oil
2 oz. Butter
Pound together the walnuts, basil leaves and garlic in a pestle and mortar until a smooth paste is formed. Cook the pasta in boiling salted water for 10 minutes or until al dente. Rinse in hot water and set aside to drain. Heat the olive oil and butter together in a saucepan, add the basil, walnut and garlic mixture and stir well to combine all the ingredients. Add the drained macaroni to the pan, stir well and heat through. Check the seasoning, add salt and pepper as needed. Serves 4.
