1/2 cup unsalted butter, plus extra for greasing pan
1 1/4 cups brown sugar
1 small fresh ripe pineapple, peeled, cored, and coarsely chopped
3 ounces all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
Salt
1/2 teaspoon vanilla extract
2 large eggs
1/4 cup sour cream

Preheat the oven to 350 degrees.  Grease a round non-stick 8 inch cake pan.  In a medium sized saucepan, over low heat, combine 1/2 cup of the sugar and 1/4 cup of the butter, stirring until well combined and smooth. Remove from heat and pour into the bottom of the cake pan. Cover with the fresh pineapple. Sift flour and mix with baking soda, baking powder, and a pinch of salt. Beat the remaining butter 1/4 cup with the remaining sugar 3/4 cup until smooth. Add vanilla. Beat in the eggs, one at a time. Mix well. Stir in flour mixture and fold in the sour cream. Stir well and pour into the pan over the pineapple. Bake in the oven for 40 to 50 minutes, covering with foil if the surface begins to brown.  Allow to stand 5 minutes in pan before inverting onto a round serving dish.  Don't remove pan until the cake has cooled. Serves 6 to 8.
