4 oz. Chopped frozen spinach 8 oz. Ricotta cheese 3 oz. Parmesan cheese Salt and freshly ground black pepper Freshly grated nutmeg 1 egg, slightly beaten 1 1/2 oz. Butter
Preheat the oven to 400 degrees. Defrost the spinach and press it between two plates to extract all the moisture. Mix the spinach with the ricotta cheese, half the Parmesan, salt, pepper and nutmeg. Gradually add the egg, beating well until the mixture holds together when shaped. With floured hands, shape the mixture into ovals. Use about 1 tablespoon mixture for each gnocchi. Heat a pan of water until simmering. Lower the gnocchi into the water, 3 or 4 at a time, and allow them to cook gently until the gnocchi float to the surface in about 1 to 2 minutes. Remove with a slotted spoon and place in a well buttered ovenproof dish. When all the gnocchi are cooked, sprinkle with the remaining Parmesan cheese and dot with the remaining butter. Reheat for 10 minutes in the hot oven, then brown under a preheated grill before serving, if needed. Serves 4 to 6. Critics rate "As the Mouse Moves" as HOT!
