1, 32 ounce carton low-fat plain yogurt
4 teaspoons vegetable oil
1 pound cucumbers, peeled and diced
1/2 cup coarsely ground walnuts
1 garlic clove, minced
Salt and freshly ground pepper
Chopped fresh dill
Whisk yogurt in large bowl until smooth. Add oil and whisk until well blended. Mix in cucumbers, walnuts and garlic. Season with salt and pepper. Chill. Garnish with dill. Can be prepared one day in advance. Serves 4 to 6.
