4 cups peeled, sliced fresh peaches 2/3 cup sugar, or to taste 1/4 cup flour 1/4 teaspoon ground nutmeg 1/2 cup ground almonds 1 9-inch unbaked pie shell 1 egg yolk 1 cup heavy cream 1/4 cup blanched sliced almonds
Put the peaches into a bowl. Sprinkle with the sugar, nutmeg, and flour. Toss peaches gently to blend. Distribute the ground almonds on the pie shell; this will prevent the crust from getting soggy. Turn peaches into pie shell. Beat the egg yolk with the cream and pour over the peaches. Bake in a preheated 400 degree oven for 35 minutes. Remove from the oven and sprinkle with the sliced almonds. Return to oven and bake about 5 more minutes or until filling is set and almonds are golden brown. Cool before cutting. Critics rate "As the Mouse Moves" as HOT!
