5 ounces smoked ham, cut into thick slices
5 ounces smoked mozzarella
2 ounces unsalted butter, plus extra for greasing pan
4 fresh sage leaves, chopped
1 cup heavy cream
3 tablespoons grated Parmesan cheese
Salt and Pepper
1 pound Macaroni
2 tablespoons dried bread crumbs

Dice the ham. Remove the outer skin of the mozzarella and cut into thin slices. In a small skillet, heat 1 ounce of the butter with the ham and the sage leaves. Cook gently for 3 to 4 minutes. Put the cream in a casserole with the mozzarella and 2 tablespoons of Parmesan cheese and cook over low heat until the cheese melts.  Take off the heat and season with pepper. While you prepare the cheese cream, bring 4 quarts of water to a boil adding 1 1/2 tablespoons of salt.  Cook pasta al dente, drain and return to pot. Dress the ham and the remaining butter.  Cook over a low heat for a few seconds, mixing well. Take off the heat, and stir in the cheese sauce.  Transfer to a shallow, greased baking dish and dust the top with the remaining tablespoon of Parmesan cheese minced with the bread crumbs. Cook in a preheated 375 degree oven for about 15 minutes until top is slightly browned. Serves 6.
